As soon as you mentioned an incense to represent Judaism, I thought of Besamom- a fragrant blend smelled (unlit, unsmoky) in the ritual that closes out shabbat alongside wine and a candle. Technically you’re allowed to make it using anything but traditionally it’s got frankincense, myrrh, balm of gilead and cinnamon.
